Easy and tasty eggs with tomato sauce

Eggs and tomato sauce makes a light, but satisfying meal anytime of the day. It would make a wonderful breakfast, brunch or dinner dish. Best of all, it is so easy to make!

INGREDIENTS
4 eggs
4 ripe tomatoes, chopped
1 teaspoon olive oil
salt
pepper
PREPARATION
Pour oil in a pan and warm over medium heat. Add tomatoes and cook for 3-5 minutes, until juices begin to evaporate. Break eggs into pan and cook to desired firmness without breaking yolks. Season with salt and pepper and adjust to your desired taste.
