INGREDIENTS
4 burger buns
1 cup mixed boiled vegetables, chopped
1 cup potatoes, boiled and mashed
bread crumbs (1 slice of bread)
4 lettuce leaves
4 onion slices
8 cucumber slices
4 tomato slices
2 tablespoons tomato ketchup
chilli-ginger paste
fresh lemon juice
salt
1 tablespoon olive oil
PREPARATION
To make the vegetable cutlets, mix the vegetables, potatoes, chilli-ginger paste, lemon juice and salt. Divide the mixture into 4 equal portions. Shape into small flattened rounds and coat with bread crumbs. Deep fry in hot oil until the cutlets are golden brown.

To make the burgers, cut each bun horizontally into two. Toast them lightly (optional). Spread ½ tablespoon tomato ketchup on the lower half. Then place on top of each bun 1 lettuce leaf, a cutlet, 1 onion slice, 2 cucumber slices and 1 tomato slice. Cover with the remaining half of the bun.
