Baked Haddock with Rice, Sage and Thyme Stuffing

Haddock is a go-to diet dish as it is low in fat and has a firm white flesh that is meaty and satisfying. The rice stuffing makes the meal nutritionally complete and all you need is a baked tomato or green salad to garnish and you're set to go!
Preparation Time: 30 min.
Cooking Time: 30-40 min.
Servings: 4
INGREDIENTS
1 freshly prepared haddock (about 1.5kg)
50g butter
1 onion finely chopped
2 sticks of celery finely chopped
150g cooked rice
½ level teaspoon dried sage
½ level teaspoon dried thyme
Salt and fresh ground black pepper
PREPARATION
Sauté the onion and celery in butter until they soften. Add the cooked rice, sage and thyme and stir until well-mixed. Remove from heat. Stuff the inside of the fish with the rice mixture and place the fish in a well greased baking dish. Cover the dish with foil and bake in a fairly hot oven 375°F  (190°C) for approximately 30-40 minutes. When cooked, serve with lemon wedges, baked tomato and a side salad.
