Broccoli Fritters

These little fritters are great as an unusual party platter or a dinner party starter. In addition, they are also a great option for vegetarians. Serve them with a small and simple salad of rocket and chargrilled red peppers.

INGREDIENTS
1 broccoli head, diced into small pieces
2 garlic cloves, minced
1 onion, diced
6 large eggs, beaten
4 tablespoons freshly grated parmesan cheese
275g polenta
Freshly ground black pepper
2 tablespoons olive oil or rapeseed oil for shallow frying
A little whole-wheat flour for dusting hands
PREPARATION
In a large bowl, combine the broccoli, garlic, onion and eggs and mix well. Stir in the parmesan and polenta and mix well again. Using floured hands, form into fritters of the size you desire. (This mixture will make up to 15 fritters). If mixture is too dry, add another egg but if it is too wet, add more polenta. Season with pepper to preferred taste. Heat the oil in a large shallow frying pan. Place fritters in hot oil and cook, turning once, until well browned on each side. Serve immediately.
