Courgette with Feta

The saltiness of the feta makes an excellent contrasts to the creamy courgette in this recipe. This dish can be served as part of a tapas platter or as an accompaniment to any meal.

INGREDIENTS
2 large courgettes, sliced into ½ cm discs
1 tablespoon olive oil
½ onion, sliced
1 garlic clove, minced
2 tablespoons fresh tarragon, chopped
2 tablespoons fresh basil, chopped
60g feta cheese
PREPARATION
Heat oil in a large frying pan over fairly high heat. Coat the bottom of the pan with the oil (add more if needed). When the pan is hot add the courgettes and onions. Cook quickly over high heat, stirring frequently until all courgette pieces are a little browned at least on one side (approx. 2-3 minutes). Halfway through cooking, add the garlic and herbs. If there is any sticking to the pan, add a little more oil. Remove the pan from the heat. Crumble the feta over the courgette in a single layer. Cover the pan. Let it sit for a few minutes until the cheese has melted. Place onto plates and serve immediately.
