This is a great soup to eat when it is warm outside as it is light and refreshing. Lettuce is also well known for its relaxation properties and experts claim it could even help you sleep!

INGREDIENTS
1 tablespoon olive oil
1 large onion, chopped
1 garlic clove, crushed
300g sweet potatoes, chopped into 2cm cubes
2 large lettuces of your choice, washed and chopped
4 tablespoons chopped parsley
1 ½ litres low salt vegetable stock
PREPARATION
In a large soup pan, heat the oil and add the onion and garlic over low heat, making sure it does not burn. After 5 minutes, add the potato and cook for another 2 minutes. Add the rest of the ingredients and bring to the boil, then simmer and put lid on pot. After 10 minutes, the sweet potato should be soft. Blend with a stick blender and season to taste before serving
