INGREDIENTS
500g fresh sardines or 400g canned
3 tomatoes peeled, grated
1 red pepper, chopped
1/2 bunch parsley, chopped
1 onion, chopped
1 tablespoon caper
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon pepper
PREPARATION
If the sardines are fresh, chop the heads off the fish, remove the fins, clean the belly and rinse well. Lay the sardines in a baking pan, add salt and set aside for half an hour. Preheat oven at 190°C. Add the tomatoes, red pepper, parsley, onion, capers, salt and pepper to the pan. Pour the olive oil all over and bake in the oven for about 20-30 minutes. Midway, turn the fish over with a spatula. Let it cool slightly and serve.
