INGREDIENTS
4 eggs
2 bacon strips
1 teaspoon butter or margarine
1/2 ripe avocado, peeled
1/3 cup (low-fat) milk
1/2 teaspoon salt
1/4 teaspoon pepper
PREPARATION
Use a bowl to beat the eggs. Add milk, salt and pepper. Cut avocado in cubes or just use a spoon to scoop out small chunks and stir them in. Melt butter in a skillet over medium heat. Add the eggs and stir gently until they are completely set. Top with bacon and serve warm.
