An easy dish that provides everything a well balanced diet ought to. This pot meal has a subtle glamour that won’t fail to please. Prepare a couple of hours before you want to eat and leave the flavours to infuse- then invite friends and share a relaxing evening meal.

Preparation Time: 30 min.
Cooking Time: 35 min.

INGREDIENTS
450g smoked haddock
1 onion halved and finely sliced
2 large potatoes washed and diced.
3 tomatoes diced
1 carrot diced
1 celery finely chopped
3-4 tablespoons milk
1 tablespoon flour
3-4 tablespoons single cream – optional
100g shelled prawns or shrimps
125g petit pois
1 desert-spoon chopped fresh parsley
Seasoning to suit
PREPARATION
Cover the haddock in water and bring to a boil. Remove haddock from the water and place to one side. Skim off any scum from the stock and add onions, carrot, celery and potato and cook until just tender. Add tomato and peas and turn to a very gentle simmer. Remove bones and skin from haddock and flake the flesh. Mix flour with a small amount of milk and add to the chowder along with prawns or shrimps and haddock. Stir in parsley and leave off-heat until ready to serve.
