Spaghetti and Aubergine

Want to impress your guests with a delicious party meal but are short on time? This filling, tasty and satisfying meal will come to your rescue.
Preparation Time: 15 min.
Cooking Time: 30 min.
Servings: 4
INGREDIENTS
1 large aubergine
1 medium-sized onion
1 garlic clove
1 green pepper
A handful of fresh basil (or 1 teaspoon dried)
225g chopped tomato
4 tablespoons red wine
Freshly ground black pepper and salt to season
2 tablespoons olive oil
350g cooked spaghetti
Grated parmesan
PREPARATION
Dice the aubergine, onion and green pepper. Sauté the aubergine and onion until they soften and turn slightly brown. Add the garlic, green pepper, basil, chopped tomato and wine. Simmer for approximately 25 minutes. Season to taste adding a pinch of sugar if necessary to neutralise any sharpness. Glaze spaghetti with a little butter or extra oil if desired and season with fresh course ground black pepper, then tip into serving dish. Pour the sauce on top and garnish with grated parmesan. Enjoy with what's left of the red wine!
