Tuna, Olive and Feta Salad

This salad combines many summer and Mediterranean flavours. The ingredients include; pine nuts, feta cheese, olives, garlic and fresh basil - simply delicious, served either hot or cold.
Preparation Time: 25 min.
Cooking Time: 10 min.

INGREDIENTS
2 tins tuna in springwater, drained (2oz. each)
200g pasta, any shape or linguine
20 Kalamata olives, pitted and sliced
1 tablespoon toasted pine nuts
2 garlic cloves, crushed
A handful of chopped fresh parsley
A handful of fresh chopped basil
60g feta cheese, crumbled (optional)
1 lemon, juiced
1 tablespoon olive oil
PREPARATION
Cook pasta in a large pot of boiling salted water until al dente. Once ready, drain and set aside. Mix the tuna, olives, pine nuts, garlic, parsley, basil and crumbled feta cheese together in a large serving bowl. Coat the pasta with lemon juice and olive oil then add the pasta to the tuna mixture.
