Beef Fillet with Fresh Asparagus

Want to act a little more fancy? The texture of the asparagus in this meal adds that much sought-after gourmet element. It's clever combination with a juicy fillet is all that's needed to create a fresh and exciting recipe.

INGREDIENTS
4 beef fillets, about 120g each
12 asparagus spears
1/2 teaspoon dried oregano
1 tablespoon olive oil
salt
pepper
PREPARATION
Preheat oven to 200°C (400°F). Rinse the meat, pat dry and trim any fat or sinew. Season the meat with oregano, salt and pepper. Heat the olive oil in a pan and stir-fry the beef over high heat for 2 minutes. Place the meat in a baking tray and cook in the oven (35 minutes for rare cooked meat, 45 minutes for medium and 55 minutes for well done). Meanwhile cut the hard back part of asparagus and steam cook it. If you don’t have a special device for steaming, use a saucepan and a steam basket. Put 2.5cm of water (water must not be touching the basket) and cook the asparagus over high heat until it softens but remains crispy (approx. 8 minutes). Arrange the fillets and asparagus on plates and serve warm.
