INGREDIENTS
¼ white cabbage, finely sliced
¼ red cabbage, finely sliced
4 carrots, peeled and grated
2 celery sticks, trimmed and chopped
1 red pepper, finely sliced
50g fresh, shelled garden peas
70g walnuts, chopped
3 spring onions, chopped
PREPARATION
Combine all ingredients together in a bowl and mix well. (This recipe is quicker to make if you use a food processor to slice and grate the ingredients.) Serve cold with your choice of 1 tablespoon low - fat dressing or coleslaw.
