Split Pea and Ham Soup

Get ready to mix in all your favorite flavoursome meats such as cooked chorizo or salami. Are you a vegetarian? Then you can eat this meal too, simply by removing the ham. This is definitely a must-have dish on a cold winter's day.

INGREDIENTS
250g yellow split peas, soaked overnight in cold water
1 ½ litres vegetable stock
1 onion peeled and sliced
1 sweet potato, peeled and diced
100g cooked ham, chopped, (can be smoked)
3 carrots, peeled and diced
½ tablespoon mixed herbs
PREPARATION
Rinse the pre-soaked peas in a sieve and pick out any stones. Place the peas in a large soup pan with the stock and bring to a boil, then simmer for 25 minutes, skimming off any foam that rises to the surface. Add the remaining ingredients (apart from the ham), and simmer for a further 10 minutes until the vegetables are tender. Blend in a pan using a stick blender and return to low heat. Add the ham and cook for a further 5 minutes until heated through and serve.
