Chicken and vegetables kebab

This combination of juicy chicken and your favourite vegetables can be an excellent choice when you have guests or just when you like to taste a flavourful chicken.

INGREDIENTS
4 chicken breasts, boneless, skinless (100 g each)
2 tomatoes, cut into small pieces
2 green bell peppers, cut into small pieces
2 zucchinis, sliced
1 sweet onion, sliced
1 teaspoon garlic powder
1 tablespoon fresh thyme, chopped
1 tablespoon coriander
1 teaspoon ginger
1 tablespoon olive oil
1/2 cup fresh lemon juice
1/4 teaspoon salt
12 skewers
PREPARATION
Wash the chicken breasts thoroughly and pat dry. Mix the garlic powder, thyme, coriander, ginger, salt, lemon juice and olive oil in a bowl. Coat the chicken breasts with the mixture. Marinate by putting them in a platter, cover and refrigerate at least 2 hours.

Drain the chicken and cut it into small pieces (about 3 cm each). Reserve the marinade. Blend chicken and vegetables – tomatoes, peppers, zucchinis, onion- on skewers and brush with marinade. Broil or grill for 8-10 minutes until chicken is tender.
