Flavorful Chicken with Capers

Chicken breast provides lean protein and is easily adaptable to all kinds of flavours. In this case we'll blend the chicken together with capers and white wine. This simple and delicious meal is ideal for lunch or dinner, and can be served with a green salad.

INGREDIENTS
4 chicken breast, halved 
2 tablespoon capers, drained
1 onion, minced
1/2 cup white wine
1/2 cup chicken broth
1 stalk fresh parsley, chopped
1 tablespoon fresh lemon juice
2 tablespoon olive oil
salt
pepper
PREPARATION
Rinse the chicken and pat dry. Season both sides with salt and pepper. Heat the olive oil in a non-stick pan over medium-high heat. Add chicken and cook for about 4-5 minutes on each side or until they are cooked thoroughly. Remove the chicken from pan and cover loosely to keep it warm. Add the broth, wine and lemon juice to the pan. Add the capers and onion and cook another minute, stirring it often. Put the chicken back to pan for 2 minutes. Arrange in plates, sprinkle parsley on top and serve warm.
