Watermelon and Feta Salad

This summery and refreshing salad also works very well with goats cheese or stilton instead of feta. Add toasted nuts for texture and you're set to go!

INGREDIENTS
400g watermelon flesh
2 peaches, pitted and sliced
170g mixed salad leaves
150g feta cheese
1 tablespoon olive oil
½ lemon, juiced
Black pepper
1tablespoon toasted seeds – pumpkin, sunflower, pine or mixed, chopped
PREPARATION
Cut the watermelon into small chunks, removing all the seeds you come across. Add the peaches (which may also be griddled over high heat to draw out more sweetness if desired). Tear the salad leaves into bite-size pieces if necessary. Combine the fruit and leaves in a large salad bowl. Crumble the feta cheese over the salad. Add the oil and lemon juice and toss gently until mixed well. Season with plenty of black pepper but add salt cautiously as the cheese may already be very salty. Sprinkle seeds over the bowl and serve.
